I caved last week at the grocery store and bought cheese, salsa, and hummus. My family was happy. It did allow for some more variety in our meals which trickles through to this week.
This week’s menu is a mix of what’s in the freezer and some specialty requests from the SP (Sweet Peanut).
Monday: Salmon Quiche
Tuesday: Ground Turkey, Ground Beef meatballs with rice (a Sweet Peanut request)
Wednesday: Chicken, mashed potatoes, green beans (another Sweet Peanut request)
Thursday: Lentil Soup
Friday: Chicken Quesadillas
