How did your menu plans go last week? I switched up a few times as is normal. I ended up making tomato soup from scratch on Thursday and this time I used fresh tomatoes. It was lovely so of course I’ll be posting that recipe soon!
This week it’s my goal to stay on track in the healthy department (look for that on my goals post later today). Lots of veggies and healthy cooking.
For desserts. Did I tell you I made chocolate chip cookies from Smart Sweets by Kitchen Stewardship? This is hush, hush but her book Better Than a Box is still only $.99 on Amazon. Get it while you can. Back to the cookies. They were so good! My husband has been scarfing them down every chance he gets. They come out with the crinkle tops and are chewy.

Monday: Leftover spaghetti sauce, noodles, and salad
Tuesday: Baked catfish with kale and sweet potatoes
Wednesday: Beef Broccoli Stir Fry
Thursday: Lentil, Sweet Potato Soup and sandwiches
