Menu Plan Monday ThanksgivingAnother week of meals. Did you notice I missed last week? I was deep in the throes of making printables, planners and such and totally missed writing up my plan for meals.

I had a plan too. We had leftovers, lots of skillet chicken dishes. I tried my hand at fautatoes, faux mashed potatoes, or mock mashed potatoes. My family loves them. They are made with cauliflower and taste pretty good. We’ll probably have them again this week so I’ll send you to a recipe if your interested.

 

Monday: Baked salmon with avocado dressing {recipe below}, sauteed zucchini and rice

Tuesday: Nigerian Stew over rice with veggies

Wednesday: Broiled Sirloin and Faux Potatoes

Thursday: Lentil Soup and Roast Beef Sandwiches

Friday: Fajitas on sprouted wheat tortillas

Recipes

Avocado Dressing

This recipe came from Whole Foods and my mom amended it to add the sugar. It is still good without. I think she's even made it with lemon or lime juice. It's a tasty dressing.

Ingredients

  • 3 Green Onions
  • 1/2 Avocado peeled and pitted
  • 1/2 cup Orange Juice
  • 1 tsp sugar
  • salt and pepper to taste

Instructions

  1. Puree all in the blender and chill until ready to serve.

Fauxtatoes

Ingredients

  • 1 head of cauliflower cut off the stalk
  • tablespoons of butter
  • salt and pepper to taste

Instructions

  1. Steam cauliflower for about 6-8 minutes until fork tender (I think that's the word). Drain well, some even say pat dry with a paper towel. Puree with butter in a food processor. Voila!
  2. I got this recipe from the Trim, Healthy Mama book. I had heard of them before but never ventured to make them. They were super easy and a family hit. The first time I made them some of the cauliflower was not as 'done' as others and didn't puree up right. BUT the texture of the whole was great! The second time I tried making them I cooked the cauliflower quite a bit longer hoping everything would puree up nice but it was a little watery. We ended up eating it like a thick soup but it was still good. This is best nice and hot.
